🧄 Chef's Note
Persian shallots are a staple of Iranian cooking — smaller, more fragrant, and more complex than their Western cousins. Growing up, they were always present in the kitchen, tucked into stews, pickles, and rice dishes. Adding them to these pickled beans is my way of honoring that heritage: a small, aromatic detail that makes all the difference. Tradition, one jar at a time.
