🥭 Chef's Note
Tamarind and mango are the soul of Persian-inspired pickling — a combination that appears across the nomadic food traditions I grew up with, where preserving fruit with spice was both an art and a necessity. This pickle is my modern interpretation of that ancient practice: bold, sun-ripened mango balanced with the deep sourness of tamarind and a warming spice blend that lingers. It's the flavor of memory, made in Vancouver.
